Price is per pound of hanging weight, $2.10 to the producer and $0.80 to the processor for cut/wrap/freeze. 1/2 has a hanging weight of 562 and 587 pounds, with a 1/4 being half of that (281 and 293 pounds). Most 1/2 will have a hanging weight between 400 and 500 pounds, with a 1/4 being half of that. Consumer gets to determine their cuts (steaks, roasts, burger) and packaging.
